Crust:
2 cups almond meal or almond flour
⅓ cup butter
2 Tablespoons erythritol or erythritol/stevia blend (Pyure)
1 teaspoon vanilla
Filling:
6-8 frozen strawberries or fresh {no sugar added)
16 ounces of cream cheese softened
⅔ cup sour cream
⅓-½ cup erythritol or erythritol/stevia blend (like Pyure) to taste
1 teaspoon vanilla

Directions:
Directions:
Preheat oven 350º. Prepare 9 inch springform pan.
Crust: prepare by stirring almond flour, melted butter, erythritol and vanilla in bowl. Dough will be crumbly. Press the dough into the bottom of prepared pan and bake for about 10-12 minutes, until barely golden. Let crust cool.
Filling: Beat cream cheese, sour cream, mashed strawberries and powdered sweetener until fluffy. Add vanilla and beat all together.
Strawberry topping: Blend 1 cup strawberries and add erythritol/stevia blend to taste. Spoon over top of slices of strawberries as desired before serving.
