1 10 oz. package of Frozen Spinach
2 C. Water
1 t. Salt
¼ t. White Pepper
1 t. Sugar
1 T. Lemon Juice
2 Egg Yolks
1 C. Half and Half
1 C. Milk

Garnishes as desired; Green Onion, sliced thin, chopped Dill, slices of Cucumber, Sour Cream

Directions:
Directions:
Cook spinach in water with salt, sugar, pepper and lemon juice until tender. With a slotted spoon, remove about a 1/2 C. spinach and chop to small pieces, set aside. Put remaining spinach and liquid in a blender. Whirl at high speed until spinach is pureed. Add cream milk and egg yolks. Temper is necessary so the yolks don't scramble. Adjust seasoning. Chill. Garnish with reserved spinach and remaining ingredients.

This is delicious but very rich. I suggest using less half and half and more milk.
