2 cups peanut butter
2 cups sugar - white works best but coconut sugar is healthier
2 eggs
(Optional 1 cup chocolate chips)

Directions:
Directions:
Combine all ingredients and mix until well blended.
Stir in the optional chocolate chips.
Roll into balls,then flatten with a fork.
Place in preheated 350º oven for about 12 minutes.

Let the baked cookies cool on the pan for a few moments then lift them on wire rack to cool completely.

Grandma Stanier served these to me as a child. She gave me this hand written recipe card way back in the early 2970s. I love seeing her hand writing as it helps bring back so many wonderful memories.
Notice it is naturally gluten free.Who knew that our family would need recipes like this!
Note: today when using lower glucemic coconut sugar and natural nut butters you might have to add a bit of coconut oil. Kraft peanut butter has a lot more fat in it.
