3 T Olive Oil
½ Onion, diced
8 Lg Eggs
½ cup Milk, or Yogurt
¼ tsp Salt
¼ tsp Pepper
8 oz sliced Mushrooms, 2 C Swiss Chard or Kale, chopped,1 C shredded Cheddar Cheese, ½ cup Parmesan Cheese

or: 2 C cooked Potatoes, diced, 1 C Ham, diced, and Cheese desired

or: 2 C cooked Asparagus, sliced, 4 oz smoked Salmon, fresh Chives, & Parsley

or: 8 oz Italian Sausage, ½ C Spinach, 1 C diced Tomatoes, Cheese as desired

or: 1 C each Red Bell Pepper & Zucchini, finely chopped, fresh Basil Leaves, chopped, & Cheese as desired

Directions:
Directions:
1. Preheat oven to 350º.
2. In a large oven proof skillet, saute onions and any veggie/meat combos you choose,
reserving any cheese.
3. Combine remaining ingredients, and cheese, and mix well.
4. Turn off heat and add egg mixture to the skillet and stir until well combined.
5. Place skillet in oven and bake until set (16-18 minutes).

Do not overbake. Mixture will continue to set after removing from the oven.
