2 c. cooked corn, fresh or frozen
1-2 avocados, cut into 1/2 in. cubes
1 pint cherry tomatoes, halved
1/2 c. finely diced red onion

Dressing:
2 T. olive oil
1/2 t. grated lime zest
1 T. fresh lime juice
1/4 c. chopped cilantro
1/4 t. salt
1/4 t. pepper

Directions:
Directions:
Combine the corn, avocado, tomatoes and onion in a large bowl. Mix together the dressing ingredients in another bowl, pour over salad, and gently toss to mix. Chill salad for an hour or two to let flavors blend.
