Ingredients: 4 boneless and skinless chicken breasts, cut horizontally in half 1/4 cup flour 1 tsp salt 1/4 tsp black pepper 4 T butter 2 oz thinly sliced proscuitto 4 oz havarti cheese, thinly sliced 1/2 cup chicken broth 1/2 cup white wine 2 T brandy

Directions:Preheat oven to 350º. Combine flour, salt and pepper in a bowl. Lightly dredge chicken filets in flour. Melt butter in a heavy skillet. Cook chicken over medium high heat about 3 minutes per side or until golden brown. Remove and put into a 9"x13" glass pan that has been sprayed with cooking spray. Put a thin slice of proscuitto over each filet then add the thinly sliced harvati onto each piece of chicken. In the skillet add the chicken broth, wine and brandy. Simmer until reduced and thickened slightly. Pour the mixture over the chicken and bake about 25 minutes or until browned and bubbly. |
