1 lb package boneless, skinless chicken breasts, cut into 1" cubes
1/4 cup cornstarch
2 T canola oil
1 red pepper, julienned
3 green onions, chopped
about 2 cups of broccoli broken into bite sized pieces
1/3 cup red wine vinegar
1/3 cup soy sauce
Pinch of red pepper flakes
1 T sugar
1/2 tsp ginger ( fresh or powdered)
2 cloves garlic, minced
peanuts, optional

Directions:
Directions:
Put the cornstarch into a large zippered bag. Add the chicken ad shake well coating all pieces of chicken. Add the oil to a large skillet and heat. When hot add the chicken and brown on all sides. Remove the chicken and add more oil if needed. On high heat stir fry the peppers and broccoli for about 3 minutes. Then add the garlic and green onions and cook about 30 seconds longer. Add the chicken back into the skillet. Mix the red wine vinegar, soy sauce, sugar and ginger and red pepper flakes together. Add to the skillet and bring to a boil. You can add peanuts at this point if you'd like. Serve with Jasmine rice.
