For the Marinade:

1 cup pineapple juice
1 cup soy sauce
1/2 cup brown sugar
1/2 tsp ginger
1/2 tsp garlic powder
1 tsp gin
2 T cornstarch
1/2 cup cold water

Chicken:

4-6 boneless, skinless chicken breasts

For the Marinade:

In a saucepan combine the pineapple juice, soy sauce, brown sugar, ginger, garlic and gin. Stir well and bring to a boil. Watch carefully because this can boil over easily. In another bowl stir together cornstarch and water. Stir into the boiling sauce and simmer for 2 minutes. Let sauce cool to room temperature.

Marinate chicken in refrigerator for at least two hours or overnight. Grill till done.
