1 pint salmon
1 cup finely chopped celery
3 T chopped onion
2 T chopped bell pepper
2 eggs
2 T fresh lemon juice
1 cup mayonnaise
2 tsp chili oil
1 cup grated cheese, divided

SAUCE;
1 to 2 tsp chili oil
1/2 cup mayonnaise
1/2 cup catsup

PASTRY:
1½ cups all purpose flour
3 T granulated sugar
1/2 tsp fine sea salt
1 tsp baking powder
6 T cold unsalted butter
1/2 cup cold milk or as needed

Instructions for Pie Shell:
Mix flour, sugar, baking powder and salt. Cut the butter into 1 inch pieces and cut into flour mixture.
Add milk just to moisten; gather into a ball; then pat into a square.
Wrap in plastic wrap and refrigerate until ready to use.
Instructions for Fish Pie:
Mix all ingredients together using only 1/2 cup cheese and pour into pie shell.
Cover with other 1/2 cup cheese. Bake at 350º for 45 minutes to 1 hour. Let rest 15 minutes.
Meanwhile, mix sauce ingredients. Serve with warm fish pie.
