3 to 4 lb Boneless Pork Shoulder
½ c Brown Sugar
½ c Tender Quick
4 T coarse Pepper

Directions:
Directions:
Mix all of the dry ingredients together well.

Untie the pork shoulder and butterfly it as much as possible.

Coat both sides of the pork with the dry ingredients and place in a large ziplock bag. Place the bag in the refrigerator and turn over each day for 12 days.

Rinse the pork well. Roll it back up as tightly as possible and tie in several places to keep it tightly rolled.

Preheat the smoker to 250-260°F and smoke the shoulder, using hickory or apple wood for about 3 yours to an internal temperature of 200°F.

Slice a thinly as possible and serve.
