2 cups sugar
4 eggs
1 1/2 cup canola oil
2 1/4 cups flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
3 cups shredded carrots

Directions:
Directions:
Grease and flour 9"x13" pan. Preheat oven to 300.

Combine the sugar, oil, eggs and beat two minutes. Combine all of the other ingredients except carrots and add to the sugar mixture. Beat well. Stirring constantly add carrots. Mix well. Pour into pan and bake at 300 for 1 hour or until a toothpick inserted comes out clean.
