2-3 cups cooked chicken, cubed
1 lb spaghetti noodles
2/3 cup flour
4 cups whole milk, warmed slightly
salt and pepper
1 green or red pepper, diced
1 onion, diced
8 oz. sliced mushrooms
12 T butter
16 oz shredded cheddar cheese
Grated Parmesan cheese

Directions:

In a large pot cook and drain the spaghetti noodles. In another large pot melt the butter, whisk in the flour and 1/2 tsp salt and 1/4 tsp pepper. Slowly add in the milk and continue to whisk until its smooth. Add the cheese and whisk again till all of the cheese is melted. Add in the spaghetti noodles, chicken, mushrooms, onion and red or green pepper. Stir well. Put into two buttered 9x13 pans. Sprinkle with parmesan cheese and bake at 350º for about 30 minutes until golden brown and bubbly.
