1 1/2 lb. boneless skinless chicken breasts cut into 1" cubes
3 cloves garlic minced
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1 T. chopped Italian parsley


For the Lemon Garlic Sauce:
3 T. canola oil
3 T. fresh lemon juice
3 T. water
1 T. oil from a jar of sun dried tomatoes
1/2 tsp. chopped fresh Italian parsley
1-2 cloves of garlic, minced
1/2 tsp. dried basil
1/2 tsp. dried oregano

for the chicken coating:
1/2 tsp. dried basil
1/2 tsp. dired oregano
1 cup bread crumbs
1/4 cup grated parmesan

For the Chicken:

Mix garlic, lemon juice and olive oil and parsley in a zippered bag. Add the chicken cubes, close the bag and turn to coat. Chill and let marinate in the refrigerator 8 hours or overnight.

Make the sauce by whisking together canola oil, lemon juice, water, and tomato oil, garlic, parsley, 1/2 tsp basil and 1/2 tsp. oregano. Cover and let sit at room temperature overnight so the flavors blend.

If using wooden skewers, soak in water at least 30 minutes before grilling.

Combine basil, oregano, bread crumbs and parmesan in a bowl. Drain the chicken pieces and dredge in the breadcrumb mixture. Thread chicken onto skewers, not to pack too closely together.

Grill over hot fire about 10-12 minutes, turning once until they are done. Serve with lemon garlic sauce drizzled over and a pasta with red sauce on the side.
