⅓ c. yellow cornmeal
¼ c. all-purpose flour
½ tsp. baking powder
½ tsp. kosher salt, to taste
½ tsp. black pepper
handful of parsley, finely chopped
⅓ c. milk
2 c. corn
Vegetable oil for frying

Directions:
Directions:
In a large bowl whisk together cornmeal, flour, baking powder, salt, pepper, and parsley. Add milk and mix together with a wooden spoon until thick and thoroughly mixed. Add the corn and mix well. Heat skillet over medium-high heat and add some oil. Using a ⅓ measuring cup, scoop mixture onto skillet like pancakes, gently pressing each patty down so it's flat. Cook for 5 minutes on one side or until browned. Flip and cook until that side is browned. Serve immediately.
