1/2 pound raw shrimp
3/4 pound green beans
1 pound broccoli
3/4 pound small zucchini

1 c flour
2 large egg yolks

Rinse shrimp in cold water and drain well on paper towels. Trim the ends off the green beans. Cut the broccoli into florets. Cut the zucchini into 3/4" thick slices, or into long slices.. Cut large slices crosswise in half.

In a large saucepan of boiling salted water, blanch the vegetables in batches, 2 minutes for each batch. Drain and place immediately into ice water. Let sit until cold and drain in a colander.

On a work surface, dust the shrimp and vegetables on all sides with flour, tapping off any excess.

Place the egg yolks in a large bowl and add 1 1/2 c ice water, 1 c flour, and 1 tsp salt. Whisk just until smooth.

Preheat the oven to 200º. In a large deep saucepan, heat 3" of oil to 350º. In small batches, pick up shrimp and vegetables with a wooden skewer, dip into the batter, and fry for 2-3 minutes, until golden brown. Drain on a paper towel-lined baking sheet. Keep warm in the oven while frying the remaining tempura.
