1 onion – chopped

4 medium carrots – chopped

2 Tbsp. olive oil (I use canola oil)

Pinch of red pepper flakes (optional)

4 cloves chopped garlic

2 - 28oz cans peeled plum tomatoes

1 Tbsp. dry basil

1˝ tsp salt

1˝ tsp freshly ground black pepper

4 cups chicken stock /broth (2 cans + ˝ cup water)

1˝ cups Half & Half

Directions:
Directions:
In large pot, add oil and roughly chopped onions & carrots.

Sauté for 15 minutes

Add garlic and red pepper flakes if using

Sauté for 10 min or longer

Add basil, salt, pepper, tomatoes – bring to boil

Add chicken stock

Bring to boil

Simmer for 45 minutes

Using an immersion blender, puree soup

Add Half & Half while blending

Reduce heat to low
