½ cup butter
½ cup white sugar
½ cup light brown sugar
1 egg, room temperature
1 tsp. vanilla
1¼ cups all purpose flour
1 tbsp. cornstarch
½ tsp. baking soda
½ tsp. salt
1½ cups chocolate chips
1 cup pecans, chopped and toasted

Cream butter and sugars together. Add egg and vanilla and blend together. Sift in flour and cornstarch. Cornstarch ensures cookies will stay soft in the center. Combine remaining ingredients and blend together well. Drop about 2 tbsp. dough for each cookie on cookie sheet and place in fridge for 1 hour so cookies will bake evenly. Preheat oven to 325º and bake in oven 15 to 18 minutes or until golden brown around edges. Cool on tray before removing them.

Tip: form cookies on cookie sheet, freeze on cookie sheet and place in plastic bags. When you need cookies, take out what you need from the freezer, let thaw for 20 minutes and bake.
