3/4 cup stout (Guinness works well)
1/2 tsp baking soda
2/3 cup molasses
3/4 cup packed (5 1/4 ounces) light brown sugar
1/4 cup (1 3/4 ounces) granulated sugar
1 1/2 cups (7.5 ounces) all purpose flour
2 Tbsp ground ginger
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp ground cinnamon
1/4 tsp pepper
2 large eggs, room temperature
1/2 cup vegetable oil
1 Tbsp grated fresh ginger

Adjust the oven rack to middle position and heat the oven to 350F.
Grease an 8 inch square baking dish and line with parchment paper. Grease the parchment and flour pan.
Bring the stout to boil in a medium sauce pan over medium heat. Stir occasionally.
Remove from the heat and stir in the baking soda. The mixture will foam.
When the foaming subsides stir in the molasses, brown sugar and granulated sugar. Stir until dissolved and set aside.
In a large bowl whisk the flour, ground ginger, baking powder, salt, cinnamon and pepper together in a large bowl.
Transfer the stout mixture to a second large bowl.
Whisk in the egg, oil and grated ginger in the stout. Whisk until combined.
Whisk the wet mixture into the dry ingredients, add 1/3 at a time, vigorously whisking between additions. You want a smooth consistency.
Scrape batter into the prepared pan, smooth top with a rubber spatula.
Gently tap the pan on the counter to release the air bubbles.
Bake the cake at 350F until the top is firm to the touch and an inserted toothpick comes out clean, 35 to 45 minutes.
Allow the gingerbread to cool in the pan on a wire rack, about 1.5 hours.
Serve at room temperature with whipped cream and/or lemon curd.
