1 pound russet potatoes peeled and shredded.

2 Tbsp unsalted butter

Peel the potatoes and shred the potatoes with the large holes of a box grater or the large shredding dish of a food processor.
Wrap the shredded potatoes in a clean dish towel and squeeze to remove the moisture.
Toss the shredded potatoes with 1/4 tsp salt and pepper to taste.
Meanwhile melt 1 Tbsp butter in a 10 inch skillet over medium heat, until it begins to brown. Swirl to coat the skillet.
Scatter the shredded potatoes evenly over the skillet. Press to flatten.
Reduce the heat to medium and cook until dark golden brown and crisp - 7 to 8 minutes.
Slide hash brown onto a large plate.
Melt the remaining 1 Tbsp butter in the now empty skillet. Swirl to coat the pan.
Invert the hash browns onto a second clean plate. Flip the two plates so the browned side is facing up on the plate.
Slide the potatoes back into the skillet, so the uncooked side is down and the cook side is up.
Continue to cook over medium heat, 5 to 6 minutes longer, until the bottom is browned.
Fold the hash browns in half and cook for 1 minute more.
Slide onto a serving plate, cut into wedges and serve.
