4-6 Red Fish fillets (or can use a good white fish)
4-6 garlic gloves chopped fine
1/2 cup Olive Oil (can add more if needed)
Chef Paul Magic seasoning blend ~ Blackened Redfish Magic

Directions:
Directions:

Soak fish in ice water until ready to grill. Lay on paper towel to remove excess water. Chop garlic and let sit in Olive oil. Spray grill pan with olive oil and Place fish on Grill pan. (use metal grill pan with holesand place a cookie sheet under pan as you prepare to catch any drippings)
Use spoon to drizzle olive oil and garlic over fish. Sprinkle top side with Chef Paul’s Magic seasoning. Let rest for 10-15 minutes. Place grill pan with fish on grill (high heat) for about 10 minutes. Fish is done when white and flakey. Smaller fillets will take less time larger ones a little more time. Have the cookie sheet available to place grill pan on when you remove it from the grill.
Serve immediately with your favorite condiments.

If you are cooking Redfish it is cooked with the shell on the bottom side. When you serve it use a large spatula to slide it off the shell and onto a serving platter.

*If you are cooking white fish without the shell you can season both sides but you do not need to turn it on the grill.

Red fish is a delicious salt water white fish that is seldom available in stores or restaurants. It's a real treat if you are fortunate enough to know someone, or are married to someone who fishes. There are many ways to prepare Redfish but this one is my favorite.
