1/3 cup horseradish freshly grated (or prepared)
1/3 cup mayonnaise
1 teaspoon lemon juice
1 garlic clove, smashed and minced
1 pinch cayenne
Salt and pepper, to taste

Whisk all the ingredients together and taste. Adjust the seasonings. Add more of what it needs to make it to your liking. Cover and refrigerate for an hour.

We were making our annual trip to the Palm Restaurant and I ordered the Prime Rib. It came perfectly medium-rare with a little bowl of horseradish I mistaked for the horseradish you find at the supermarket. Big mistake. My first bite almost blinded me. But with a little caution it was so good.

Experiment with the ingredient's quantities. I like to have the sauce nose-clearing, tear producingly pungent. When it's this kicked-up you have to practice safe eating techniques i.e. don't breathe in through your mouth when eating. Use on pit beef, ham sandwiches, flank steak or prime rib at the Palm.
