Directions:Place flour in a shallow dish; add measured salt and pepper and smoked paprika; combine well. Rub pork chops evenly on both sides with 1 tablespoon olive oil and season to taste with salt and pepper. Dredge chops in flour mixture. Shake off excess flour. Heat remaining oil in a heavy skillet; add chops and fry over medium heat about 3 minutes on each side or until golden brown. Remove chops to a serving dish.
To make a quick pan sauce: Pour off excess oil from skillet and add low sodium chicken broth, deglaze pan with a wooden spoon and reduce broth by half; about 3 minutes. Remove pan from heat; add herbs and butter. Swirl until glossy and smooth; pour over chops and serve right away. At table add salt and pepper to taste if desired. |
