1 Pound Brussel sprouts
6 Ounces Dried cranberries
4 Ounces Sliced or slivered almonds
2 Ounces Shredded parmesan
⅜ Cup Olive oil
6 Tablespoons White wine or champagne vinegar
3 Tablespoons Honey
3 Tablespoons Dijon mustard
¼ Teaspoon Black pepper
¼ Teaspoon Salt

Wash and dry raw brussel sprouts. Cut ¼ slices. This can be done by hand, but a mandolin will be easier and will create more uniform pieces. Add to bowl.

Add in cranberries and almonds and toss.

Shred parmesan cheese. Don't use grated as it will likely get clumped in the salad when tossed.

To make the honey dijon vinaigrette, measure out white wine vinegar, honey, and dijon mustard. Sprinkle in salt and pepper and mix thoroughly. Gradually add in olive oil and combine until the dressing has emulsified. Pour over salad and combine so all ingredients are evenly coated.
