1 medium onion, chopped fine, approximately 1 cup
2 ribs celery, chopped fine, approximately 1 cup
3 garlic cloves, minced
¼ cup olive oil
½ lb thinly sliced prosciutto, chopped fine
¾ cup vodka
1 (28-oz) can crushed tomatoes
¼ tsp cayenne pepper
1 Tbsp fresh parsley leaves, chopped
1 Tbsp dried basil leaves, crumbled
¾ tsp dried oregano leaves
1 cup half and half
1 lb rigatoni or any other tubular pasta

1. In a large heavy skillet, cook onion, celery, and garlic in oil over moderate heat. Keep stirring until soft.
2. Add prosciutto and vodka and simmer until almost all the liquid is evaporated. This will be approximately 5 to 7 minutes.
3. Add tomatoes, cayenne, and all herbs and simmer for about 20 to 25 minutes. Stir in half and half and simmer for about 3 to 5 minutes more.
4. Boil pasta in salted water until al dente; drain.
5. Add drained pasta to large skillet of sauce, turn well, and cook for 2 to 3 minutes.
