Ingredients:

2 tbsp butter
1 pound ground beef
1 large onion sliced
1 small eggplant ( peeled and cubed )
2 cups of sliced okra
1 green pepper- chopped
2 pound can of tomatoes
1teaspoon salt
1 teaspoon sugar
1 cup of cooked regular rice ( brown rice optional )

Directions:
Directions:
Melt butter, and sauté beef and onion until slightly browned.
Add the eggplant, the okra, green pepper and tomatoes. Mix well, then cover and simmer gently for 30 minutes.
Add the salt,sugar and rice after simmering.
Place in buttered casserole with cheese and bread crumbs on top.
Bake in 350º oven for 15 minutes or until brown.

This is my favorite recipe. This has been in my family for over 70 years. My Mother has been making this since 1940. Our family loves it !!!!
