1 16 oz can of Goya black eyed peas
1 10 oz can Rotel original tomatoes
4 oz diced country ham or split smoked ham hocks
1/2 yellow onion, diced
1/2 cup chicken stock
1 tbsp olive oil
Dash Tobasco
Salt and Pepper
Chopped green onions for garnish

Directions:
Directions:
In a sauce pan heat olive oil and fry the country ham and onions until lightly brown. Add the beans, Rotel and chicken stock and bring to a boil. Reduce the heat and simmer for about 30 minutes*. Taste and add Tabasco, salt or pepper to your liking.

*If using ham hocks increase cooking time to an hour. Remove ham hocks. Cut and dice ham from the hocks and add to the beans.

Having this dish on New Year's Day is thought to bring prosperity in the new year. Similar to Hoppin' John, a traditional soul food and Feijoada a Portuguese bean stew, my take on these classics has elements of both.
