8 ears of corn on the cob husked

1/2 cup mayo
1 lime juiced
1 tsp smoked paprika
1 tbsp of ground ancho chile pepper, (I skipped this as I do not like spice but you can adjust this to taste using your favorite chile pepper)
1/4 cup butter melted
1/2 cup freshly grated Cotija cheese, (substitute parmesan or romano cheese for this)
Salt to taste
1 sliced lime for garnish

Preheat outdoor grill for high heat lightly oil the grate.
Combine mayo, lime juice, paprika, and chili powder whisking until smooth then refrigerate until needed
Boil the corn in a large pot of salted water for 5 minutes and then drain
Place corn on the grill rotate every couple of minutes until the kernels are browned with caramelized spots) slightly charred)
Remove from grill brush corn with melted butter and the mayonnaise mixture until kernels are coated
Sprinkle with the cheese and salt
Garnish with lime and enjoy
