4 strips of bacon
1/2 onion, sliced
1 tsp fresh thyme
1 Tbsp butter
2 pounds parsnips, peeled and diced
5 cups chicken broth
Salt and pepper to taste

Directions:
Directions:
Set aside a plate with a paper towel on top.
Cook the bacon until crisp.
Reserve 1 Tbsp of the bacon drippings.
Set aside the bacon to cool on the plate.
Add the butter to the bacon drippings and sauté the sliced onion with the thyme.
In a Dutch oven or a soup pot add the turnips to the chicken broth, bring to a boil.
Turn to a simmer and add the sautéed onions and thyme.
Salt and pepper to taste.
Cook until the turnips are tender.
Top with the cooked crumbled bacon.
