4 green onions chopped
2 tbsp chopped red bell pepper
3 tbsp butter

Melt butter in a large nonstick skillet over medium-high heat. Add corn to pan; sauté 2 minutes. Add green onions, bell pepper, salt, and pepper to pan; sauté 2 minutes or until crisp-tender.

Driving past a farmers stand in Sandbidge is nearly impossible when piles of fresh picked ears morph into traffic wands directing the car swerve over to purchase a dozen or so. Often a few ears aren't consumed and this recipe* brings back the freshness lost after a couple of days in the vegetable basket. Getting older, I've become a corn snob like my daughter-in-law Becky, not that she's old.

*Variation: Make this dish and plate as shown above. Lay a piece of fried cod on top and spoon some lemon butter sauce on top. Garnish with a couple of sauteed shrimp.
