2 cups all-purpose flour
3 egg yolks
1 egg
2 tsp salt
1/4 to 1/2 cup water( usually closer to 1/4)

Directions:
Directions:
Mix flour, salt and eggs. Add water one teaspoon at a time until mixture holds together and ball can be formed. Knead dough until dough appears rubbery. It will take on an “elastic quality” that you’ll recognize when you feel it. Divide into 3 or 4 small balls and roll each ball as thin as possible, flouring and turning often. When as thin as possible, roll up up jelly roll style and cut or use herb cutter to cut noodles. Separate and dry on waxed paper for several hours, turning occasionally.

Can be cooked in either chicken or beef broth and served on mashed potatoes.
