9 large Roma tomatoes
½ small onion, sliced
¼ cup olive oil
2 tbsp minced garlic
1 tsp salt
¼ tsp pepper
1-370 ml can of evaporated milk or 1⅔ cups cream
½ cup grated Parmesan cheese
3 tbsp fresh basil
2 tbsp tomato paste
1 tsp sugar
salt and pepper to taste

Directions:
Directions:
Preheat oven to 400º.
Halve the tomatoes and place cut side up with the onion on a rimmed baking sheet.
Drizzle with oil and add garlic, salt and pepper, stir to coat well.
Roast for 40-50 minutes, just until they start to brown.
Place into a blender and puree until smooth.
Add milk, cheese, basil, tomato paste and sugar and puree until smooth.
Pour into a soup pot and simmer to heat.
Serve immediately- with grilled cheese of course!
