Cauliflower and Zucchini Soup Recipe

3 cloves chopped garlic
½ head chopped cauliflower
1 medium zucchini chopped
2 large chopped potatoes
1 large onion chopped
4 cups chicken broth
salt and pepper to taste

Garnish:
thyme
sour cream
olive oil

Directions:
Directions:
Preheat oven to 400º
Spread chopped cauliflower and zucchini on a baking sheet, drizzle and toss with olive oil
Roast for 10-20 minutes until browned on one side
In a medium large pot add a drizzle of olive oil on medium- high heat.
Heat oil, add onion and saute until slightly translucent
Add garlic, cooking for an additional minute
Add broth and potatoes, bring to a boil
Once boiling, reduce heat to medium, add cauliflower and zucchini, allowing to simmer for 10-15 minutes until potatoes are cooked through.
Transfer mixture to a blender and puree soup to your desired consistency.
Season to taste.
Serve and garnish with a spoonful of sour cream, a drizzle of olive oil and some fresh thyme.
