4 lbs chicken
Flour
¼ cup olive oil
Garlic cloves
2 Tbsp shallots, minced
¼ cup tomato paste
½ cup dry white wine
1 tsp salt
¼ tsp white pepper
¾ cup chicken stock
½ bay leaf
⅛ tsp thyme
½ tsp basil
⅛ tsp sweet marjoram
½ to 1 cup sliced mushrooms
2 Tbsp brandy

Directions:
1. Dredge chicken in flour and sauté in olive oil until golden brown.
2. Add all other ingredients and simmer chicken covered for 1 hour or until tender.
