Country Ham Directions

2 center cut slices dry cured country ham 1/4 inches thick-about 8 oz

(Trim away outer edge and rind from the ham)
Fry ham gently on each side until the fat is translucent and the lean part if deep, rust red (about 10 min each side)
Remove ham from skilled and keep warm. DO NOT DISCARD HAM DRIPPINGS FROM SKILLET.
 

Red-Eye Gravy

Use all the fat and drippings from the country ham, in skilled-pour brewed coffee, 1/4-1/2 cup at a time and stir.

Set aside the red eye gravy but keep warm.
 

Grits

Cook grits according to package and desired number of servings.

Put a slice of ham on a plate, scoop of grits and pour the red eye gravy over the grits and serve hot.
