1½ cup milk
1/4 cup Butter
1 teaspoon Salt
½ lb sharp cheddar
1 dash cayenne
¼ cup flour
1½ cup spinach leaf; chopped
6 eggs; separated

Directions:
Directions:
Preheat oven to 300. Heat (don't scald) milk. Melt butter and blend in flour, then milk, salt, and cayenne. Keep stirring until smooth and thick. Thinly slice cheese into the sauce and stir until fully melted. Remove from heat. Beat egg yolks until blended, stir in a little of the sauce, then this into remaining sauce. Beat whites until stiff but not dry; fold into sauce. Stir in spinach (cold). Pour into ungreased 2 qt souffle dist, put in pan of hot water in oven, and bake 1 1/4 hours or a bit more. Do not open oven until at least 1 1/4 hour. Serve with a mushroom sauce.

One of my dad's favorites and one of mine too. He was very proud when it came out of the oven puffy and beautifully browned. These are his words and the admonition to not open the oven door to check is a remnant of the time before most ovens have a glass window.
