2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 TB cinnamon
3/4 c. oil
3 eggs
1 1/2 c. brown sugar, packed
2 tsp. vanilla
1 c. zucchini, unpeeled and shredded
1 c. carrots, shredded
1 c. walnuts or pecan, chopped
1/2 c bran flakes cereal, crushed

Directions:
Directions:
Combine first 5 ingredients in a mixing bowl. Set aside. Combine oil, eggs, sugar and vanilla in a large bowl and beat well. Stir in zucchini and carrots. Add flour mixture, stirring just until moistened. Stir in nuts and cereal. Pour into 2 greased and floured loaf pans. Bake 350º for 1 hour or until toothpick comes out clean. Cool loaves in pans for 10 mins. Remove to wire racks and cool completely.
