3 lb. chicken, cooked and cubed. Save broth
1 pkg. flour tortillas
1 can mushroom of soup
1 can cream of chicken soup
1 can Rotel tomatoes
1 lb. Velveeta cheese
Olives, chopped (opt.)
Directions:
Directions:
Dip the tortillas in the warm broth and lay in buttered 9"x 12" casserole. Fill each tortilla loosely with chicken, roll and place folded side down. Mix and melt soups, Rotel and cheese in double boiler and pour over enchiladas. Bake 350º for 40 mins. until bubbly. May be frozen then baked. This was Meme's recipe.
