1 c butter
1 c sugar
2 egg yolks
1 t grated lemon rind
2 t lemon juice
2 c flour

1 egg white
Ground almond or pecans

Directions:
Directions:
Cream butter and sugar, beat until light and fluffy. Add egg yolks, lemon and vanilla, blend well. Add flour and stir to combine ingredients. Chill 2 hours or until firm. Whip egg whites until frothy.
Roll dough out ¼ inch thick and cut with 2 inch cutters. Place on parchment paper lined sheets and brush lightly with frothy egg whites. Sprinkle with ground nuts. Bake at 350º for 15-20 minutes.
