2 (10 oz.) packages frozen chopped spinach
1 tbsp. minced dried onion
2 c. herb-seasoned stuffing croutons
1 c. grated Parmesan cheese
2 beaten eggs
3 tbsp. butter or margarine, melted

Directions:
Directions:
In a saucepan, cook the spinach and dried onion according to spinach package directions. Drain well. In mixing bowl, combine spinach mixture, croutons, and cheese. Stir in eggs and melted butter or margarine. Shape into 1 inch balls. Place in a shallow pan. Cover and freeze. Transfer to freezer storage containers; return to freezer.
At serving time, place frozen nuggets in a shallow baking pan. Bake in a 375º oven for 15 to 20 minutes or till heated through. Makes about 48.
