4 cups old fashioned rolled oats
2 cups sweetened shredded coconut
2 cups sliced almonds
3/4 cup vegetable oil
1/2 cup honey
1-1/2 cups small diced dried apricots
2 cups dried cranberries, or raisins, cherries, or a combination of them
1 cup roasted cashews
1 tsp vanilla
1/4 tsp salt
1 tsp cinnamon

Preheat oven to 250º

Toss the oats, coconut, almonds, pecans, cinnamon, and salt together in a large bowl. Whisk together the oil, honey, and vanilla in a small bowl until totally combined. Pour the liquid over the oat mixture and stir with a spatula until all of the oats and nuts are coated. Pour into 2 cookie sheets. Bake for approximately 45 minutes to an hour, stirring every 15 minutes until granola turns a nice golden brown.

Remove the granola from the oven and allow to cool. Break up in small chunks and add the apricots and cranberries. Enjoy!

Store in an airtight container.
