½ cup butter
1 cup dark brown sugar
2 Tbsp flour
1 tsp vanilla
½ tsp salt
1 egg
1½ cups rolled oats
½ cup ground pecans (optional)
dark chocolate for drizzling

Directions:
Directions:
Preheat oven to 350º
Line cookie sheet with parchment paper
Melt butter in medium size pan over medium heat
Stir in brown sugar until combined
Remove from heat and add flour, vanilla and salt
Stir to slightly cool then add egg until well combined
Stir in oats
Drop small scoops onto prepared baking sheet and flatten with the back of a spoon
Allow plenty of space for cookies to spread and bake 12-14 minutes.
When done, cookies will be thin, crisp and lacy
Drizzle tops with melted chocolate or spread a thin layer on back and sandwich together
