2 frozen packages cauliflower heads
2 tbsp. butter
3 tsp. minced garlic (jar)
3 tbsp. all-purpose flour
2 c. whole milk
2 oz. cream cheese, softened
1 1/2 c. shredded cheddar, divided
Salt & Pepper as needed
2 tbsp freshly chopped oregano & parsley
10 thick slices bacon, cooked, crumbled, drained
1/4 c. sliced green onions or scallions

Cheese sauce: In a large skillet, melt butter. Add garlic and cook until fragrant, 1 minute, add flour and stir until golden, 2 minutes. Add milk and bring to a low simmer, add cream cheese, slowly whisking until combined. Remove from heat and stir in 1 cup cheddar until melted and season with salt and pepper.
Place frozen cauliflower in boiling water just long enough to unfreeze and warm up. Drain. Place in baking 9 x 13 dish, sprinkle fresh oregano and parsley and half the bacon and green onion or scallions, pour the cheese sauce, then sprinkle the remaining bacon, oregano & parsley.
Bake until cauliflower is tender, and cheese is melted, about 30 minutes.
