Two-Way Bran Meatloaf Recipe

Meatloaf:
1 lb. lean ground beef
¾ c. cocktail vegetable juice
¾ c. Nabisco 100% Bran
1 egg, beaten
¼ c. chopped onion
¼ tsp. ground black pepper

Florentine Filling:
1 ( 10 oz.) package frozen chopped spinach, thawed and drained
2 hard-cooked eggs
3 tbsp. mayonnaise
½ tsp. salt

Italian Filling:
8 thin slices boiled ham
1½ c. grated mozzarella cheese
½ tsp. oregano

Directions:
1. Preheat oven to 350º. Grease 13X9 inch pan.
2. In medium bowl, combine beef, vegetable juice, Nabisco 100% Bran, egg, onion and pepper. On waxed paper, shape into 12 X10 inch rectangle.
3. Florentine Filling: Mix spinach with 1 egg, mayonnaise and salt. Spread on meat, leaving 1 inch margin around edges.
Italian Filling: Place ham slices on meat, leaving 1 inch margin around edges. Mix 1¼ cups mozzarella cheese with oregano; sprinkle over ham.
4. Starting with short end of meat and using waxed paper to lift, roll meat, sealing edges and ends. Place in pan seam-side down; bake 1 hour.
Garnish Florentine Meat Loaf: Slice reserved egg; place down center. Makes 6 servings.
Garnish Italian Meat Loaf: Sprinkle reserved ¼ cup mozzarella cheese over top; bake 5 minutes to melt cheese. Makes 6 servings.
