Ingredients:  
1 large butternut squash
2 to 3 medium potatoes, peeled and cut in ¼ inch slices
3 ribs celery
1 onion, peeled and cut into ¼ inch slices
1 large can chicken stock (I use College Inn low fat/salt)
¼ lb sweet butter (don't waste your time with margarine)
Salt and white pepper
Nutmeg and/or cinnamon

Directions:
Directions:
1. Melt butter, add squash and reserve.
3. Add vegetables. Sauté until onions are transparent.
4. Add stock and cook 30 to 40 minutes.
5. Cool a little and purée in blender a little at a time.
6. Return to heat and add seasonings; simmer 10 minutes.
7. Optional: Garnish with parsely.
