4 egg whites
1 pinch of salt
1 cup plus 2 Tbs. superfine
sugar
1tsp. cornstarch
1 tsp. vinegar
1/2 tsp. vanilla
2 Tbs. unsweetened cocoa
powder

Directions:
Directions:
- Preheat oven to 300º.
- Beat egg whites and salt on high speed until glossy peaks form.
- With mixer running, add sugar in three (3) additions, beating until meringue is stiff and glossy.
- Sprinkle in cornstarch, vinegar and vanilla; gently fold in cocoa so that streaks of cocoa remain.
- using an ice cream scoop, drop meringue onto a parchment-lined baking sheet,spacing about 3” apart.
- Bake until puffed, 30 min.
- Turn off oven and let meringue stand at least 2 hours or up to overnight.
