3 pounds chicken or pork
2 large onions, chopped
1 (15-ounce) can of mild green chile enchilada sauce
1 (4-ounce) cans of chopped green chiles
1 (15-ounce) can reduced-sodium chicken broth
1/2teaspoon dried oregano leaves
8 - 10 garlic cloves, minced
2 (15-ounce) cans white or yellow hominy, undrained
2 1/2tablespoons chipotle adobo sauce (from a can of chipotle peppers)
Toppings:
Sliced radishes, chopped cilantro, chopped cabbage, lemons, limes, and crumbled queso fresco cheese

Directions:
Directions:
Place meat in large slow cooker. Add all other ingredients.
Cook on medium heat 6 to 8 hours, until meat is fork tender. Shred using 2 forks. Serve in individual bowls with toppings.
