3 eggs
2 cup sugar
2 cups grated zucchini
1 tsp salt
1/4 tsp baking powder
1 cup oil
1 tsp oil
1 tsp vanilla
3 cups flour
1 tsp soda
1 tbsp cinnamon

Glaze
2 cup powdered sugar
2 tsp maple flavoring
2 tsp milk





Directions:

Beat eggs in bowl until foamy. Add oil, sugar and vanilla, beat at medium speed for 4 minutes. Stir in zucchini. Add dry ingredients gradually. Mixing well after each addition. Pour into 2 greased and floured loaf pans. Bake 325 for 1 hour 10 minutes. Cool 1 hour before slicing. Makes two loaves.

Glaze
Mix powdered sugar and maple flavoring along with small amount of milk. Pour over warm zucchini bread. Add more powdered sugar if thicker glaze is desired.
