2 cups Sugar
1 cup Oil (I used melted Coconut Oil)
1 large can Pumpkin (28oz)
1 tsp Salt
1 tsp Cinnamon
1 tsp Pumpkin Pie Spice
3 Eggs
1 tsp Vanilla
5 cups Flour
5 tsp Baking Soda

Directions:
Directions:
Mix sugar, oil, eggs, vanilla and pumpkin. In a separate bowl combine dry ingredients. Combine the two mixtures and beat on medium for one minute. Pour into greased pans and bake at 350º for 55-60 minutes.

Makes 3 medium loaves or 2 large and 1 smaller.
