4 cloves of garlic minced
2 Tbsp. lime juice
1/2 Tsp. salt
1/4 Tsp. black pepper
2 lb. chicken pieces (bone in)
3 Tbsp. olive oil
3 cups chicken broth
1 red onion (diced)
1 small bell pepper (seeded & chopped)
1 Tsp. ground cumin
2 bay leaves
1 sazon packet
2 cups rice (sofrito)
2 Tbsp. green olives

Directions:

In a large bowl stir together garlic, lime juice, salt and pepper. Add chicken toss to coat and refrigerate for an hour. In a large frying pan heat olive oil (1 tbsp) over medium heat. Arrange chicken in a pan. Cook on each side for 10 minutes. Remove from pan. In a large pot heat oil, chopped onion, bell pepper and sofrito, until softened. Add cumin, bay leaves, 1 sazon packet, olives and rice. Stir constantly until rice absorbed the juices about 3 minutes. Pour chicken broth and stir. Raise heat to medium-high and bring to a boil. Reduce heat to low, cover and simmer 35 minutes or until chicken is cooked through. Stir to prevent rice from sticking. Let stand 5 minutes. Remove bay leaves Serve and Enjoy!
