1 cup cooked, skinless, diced chicken breast
⅔ cup diced onion
1½ tsp minced garlic
1 T toasted sesame oil
1½ tsp curry powder
½ tsp pepper
½ tsp read pepper flakes
3 cups chicken broth
1 6-oz can tomato paste
1 14½-oz can stewed tomatoes
½ cup reduced fat peanut butter

Directions:
Directions:
In a large pot, saute onion in sesame oil until translucent; add garlic and chicken and stir to heat through. Add seasonings and saute 1 minute longer. Add broth, paste, tomatoes and peanut butter. Stir until well combined. Heat over medium heat util hot but not boiling. Serve immediately for a very unique and creamy soup blend. Can be served over rice. Refrigerate leftovers within 2-3 hours.
